It’s mid September and fall is definitely here.  Gone are light summer salads and skinless grilled meats.  What’s IN and What’s Happening, Fall COMFORT food!  Aka Football food.  It’s time to snuggle in, get cozy and treat yourself to some of our favorite fall recipes. One to try for next weeks kick off that will leave your whole team screaming for more, are Sliders on a Pretzel Bun.   A hip new way to serve those little burgers that will surely impress.  Totally 2013.  And we’re always looking for warm, ooey, gooey sides to go with our hearty fall dinners & Saveur Magazine has some great idea’s in their “September’s most favorite’s” list.  We’re crazy about the Creamed Onion Gratin.

Eclectic & Bright Table Toppers

Our watermelon feta skewer or peach caprese with mint adds a surprising spin to an end of summer soiree. Or our smoked deviled eggs with pickled jalapenos aren’t only hot & spicy good but compliment the playful ambience of the table. Today’s take away: not only mix & match the eclectic tabletop elements but include the food as part of the styling too!

Our World Famous Avocado-Feta Salsa

This is one of our all time favorites and a recipe that’s easy to duplicate.  In this version we introduce tantalizing new flavors to a now common party staple like “salsa.”  Something about the salty feta and creamy avocado make “Our World Famous Avocado-Feta Salsa” addicting.  This is California in a bowl, summer style.  Fresh herbs and tangy red wine vinegar compliment this dish to the fullest.  Clean, creamy and tangy.  Great as a classic dip or as an amazing garnish to fish, grilled chicken or any sort of taco.   Cheers to easy summer living!

Ingredients:

  • 2 plum tomatoes-chopped
  • 1/4 cups red onion-chopped
  • 1 tablespoon fresh oregano-chopped
  • 1 tablespoon cilantro-chopped
  • 1 tablespoon parsley-chopped
  • 4 oz. feta cheese-crumbled (add last)
  • 2 avocados-chopped
  • 1 clove garlic-minced
  • 1 tablespoon Olive oil
  • 1 tablespoon red wine vinegar
  • Dash of lime juice

Combine and refrigerate for at least 2 hours

Grilled-Mango-Smash-Endless-Simmer1-333x500An adult twist on a kid classic.  We all love popsicle’s (with a little RUM)!  This a great idea for cocktail hour on a hot summer day or a refreshing cold dessert idea at your next summer BBQ.  The idea is classic kid fun with an added adult kick.  Grilled mango and tomatillo’s make this sweet idea, savory and delicious.  This isn’t your mothers homemade syrupy treat, but rather a sophisticated more savory version with grilled summer fruit, fresh herbs & lime.  It’s Poptail Hour!

A Modern BBQ Side Dish

I know a lot of people who when they hear the word “brussel sprouts” they think about a soggy or mushy, green vegetable.  WRONG, when cooked right these delicious vegetables can be the queen side dish of any party.  We found this tangy and sweet version that is sure to be the hit with your guests & family.   Check out this recipe for Roasted Brussel Sprouts with Cranberries and Balsamic Vinegar.

Refreshing Summer BBQ Bites

Who doesn’t LOVE burgers.  They are the staple of most every “all American” Barbecue.  This vegetarian version from greenkitchenstories.com is one of the best we’ve ever seen and more importantly, ever tasted!  Fresh and unbelievably meaty (with no meat).  This is an exciting a SUPER fresh version of the American classic, vegan style.   Portobello Peach Burger is to die for!

Infectious giggle? Check. Crazy work ethic? Got it. Passion for event planning? All over it! Total score for us that our newest team member, Ryann Hastings is the total package. A recent grad from the Hospitality & Tourism Management program at SDSU, Ryann not only dresses super cute everyday but incorporates that sophisticated eye for style into her event design.

A fun fact about our new gal: eventually she would love to have her own bakery and lifestyle home goods store. Since she loves sweet treats, candles and flowers why not put them all in one place!

Oh and by the way, if she’s not working late or hitting a Pilates class, you can find her at her local go-to for the best food & bev, Craft & Commerce in Little Italy, yum!!!

Omegawave World Triathlon–San Diego

Last weekend Team Crown Point Catering participated in the ITU World Triathlon along Mission Bay……by serving up the VIP’s from around the world!
 
One hundred and thirty of the world’s fastest tri-athletes ran and cycled the streets of Mission Beach and swam the deep waters of the Pacific Ocean. Such an exciting honor to be chosen as the only US host city that includes stops in Auckland, Yokohama, Madrid, Kitxbuhel, Hamburg, Stockholm and London. 
For those of us that couldn’t attend the 2012 Summer Olympics, this prestigious event was exactly like the triathlon held at Hyde Park, but right here in our sleepy little beach town.
